Smoked Beef Tenderloin with Tomato Chutney

Ingredients

- 1 beef tenderloin, about 1.2kg

- 1 tbsp of salt

- ½ tsp pepper

- 1 tsp garlic powder

- 1 tsp paprika

- 1.5 kg of tomatoes

- 1 onion

- ½ tsp cumin

- ½ tsp ground coriander

- 150 mL vinegar

- 25 g sugar

- Salt / Pepper

Steps

1/ In a bowl, mix salt, pepper, garlic powder and paprika.

2/ Coat the beef tenderloin with olive oil and sprinkle generously with the spice mixture previously made.

3/ Program the Meat°it + application to the "Beef - Rare" cooking mode and insert the probe into the thickest part of the beef tenderloin.

4/ In an oven or on a barbecue in indirect heat, cook the beef tenderloin until you receive a notification of the end of cooking (54°C).

5/ Meanwhile, prepare the tomato chutney. In a frying pan, brown the finely chopped onion, cumin, ground coriander and pepper with a drizzle of olive oil. Cook for about 8 minutes over low heat. Add the tomatoes, vinegar and sugar.

6/ Simmer for about 25 minutes and adjust salt and pepper seasoning.

7/ When you receive the notice of the end of cooking, program a rest period of 10 minutes and cover the beef fillet with aluminum foil.
