1/ Oil the grill of your barbecue and sear the meat for 3 min on one side.
2/ Turn the prime rib at 90°C so that it makes nice grill marks.
3/ Place it on the uncooked side.
4/ Program the Meat°it + application to a "Beef - Rare" setting, i.e. 54°C and insert the probe into the thickest part of the prime rib.
5/ Meanwhile, prepare the pepper sauce. Start by crushing the peppercorns with a pestle.
6/ In a saucepan, melt the butter and add the fresh cream.
7/ Add the crushed peppercorns and let it thicken by adding flour. Mix well for about 10 minutes.
8/ When you receive the end of cooking notification, program a 5 minute resting time directly on the application.
9/ Top your prime rib with the pepper sauce and serve.
