Zucchini, feta and mint salad
1 small clove of garlic
roasted pine nuts
1/ In a bowl, mix the lemon juice with salt, pepper and a chopped garlic clove.
2/ Cut zucchini tagliatelle with a vegetable slicer and pour the lemon mixture over them. Leave to rest in a cool place for at least 1 hour.
3/ Drizzle with olive oil, mint, feta cheese and roasted pine nuts.
