Vegetable stir fry

For 6 persons

2 carrots

1 zucchini

1 small head of broccoli

¼ head of cauliflower

1 small red bell pepper

1 small yellow bell pepper

7 oz/200 g green beans

5 oz/150 g fresh green peas

1 small red onion

1 clove of garlic

Sunflower oil

Salt, Pepper


1/ Wash and break apart the cauliflower and broccoli into small florets. Top and tail the green beans. Bring salted water to the boil in your wok. Add all the vegetables along with the peas. Blanch for 5 minutes. Drain using a sieve or the steamer basket and set aside.

2/ Wash, remove seeds and core, then mince the bell peppers. Peel and cut the carrots into slices. Wash and cut the ends off the zucchini, then slice into pieces. Peel and mince the onion. Peel and chop the garlic.

3/ Heat a dash of oil in the wok. Add the zucchini slices and sauté for 5 minutes over high heat. Place the zucchini on the grill sitting over the wok to keep it warm.

4/ Heat a dash of oil in the wok. Add the garlic, onion, carrots and bell peppers, salt and pepper. Pour in a small glass of water. Bring to a boil over high heat and cook until the liquid evaporates completely.

5/ Add the zucchini, green beans, peas, broccoli and cauliflower. Sauté 5 minutes and serve.
