1/ Follow the instructions on the package to cook the rice in salted boiling water in your wok. Drain in a sieve or in your steamer basket and keep warm.
2/ Peel the prawns leaving the last ring and tail. Wash, remove seeds and core, then mince the bell peppers. Wash and peel strings off the fennel and mince.
3/ Blanch the peas and snow peas for 5 minutes in salted boiling water in your wok. Remove and immediately soak in ice-cold water. Drain and set aside.
4/ Heat a dash of oil in the wok. Add the bell peppers and fennel. Sauté for 5 minutes over high heat, stirring occasionally. Add the shrimp, salt and pepper, and cook for 5 more minutes. Add the peas and snow peas. Sauté for 2 minutes.
5/ Serve with the rice.
