Smoked salmon and avocado mousse verrines

For 4 persons

2 large avocados
30 cl of full cream
A little lemon juice
Aperitif cakes like TUC 
Smoked salmon
Pink berries
Salt and pepper



Blend the avocado flesh with the cream, a few drops of lemon juice, salt and pepper until smooth. Strain the mixture through a funnel and pour into the siphon. Place in a cool place for at least 1 hour.

In glasses, crush cookies, cover with pieces of smoked salmon. Add the avocado mousse just before serving. Decorate with pink berries.
