Place the chicken in a baking dish. Cut the potatoes into pieces and place them in the dish. Sprinkle the chicken and potatoes with pieces of butter. Season with salt and pepper and add the herbs de provence or spices of your choice. Sprinkle the dish with half a glass of water. Stick the probe in the fleshy part of the thigh (without touching the bone!).
Cook for about 1h30 at 230°C until the probe indicates an internal temperature of 83°C.
