Onion Chutney

Ingredients

500 g onions
60 g of honey
10 cl of white wine
10 cl of cider vinegar
10 g of butter 
1 pinch of ginger 
1 pinch of cinnamon
Olive oil
salt and pepper

Steps

Peel and chop the onions using the mini chopper. Heat the butter and oil in a saucepan. Sweat the onions for 5 minutes, stirring. Add the spices, honey, salt and pepper. Caramelize for another 5 minutes. Pour in the wine and vinegar, cover and simmer over very low heat for 25 minutes, stirring regularly. The liquid should be completely absorbed and the onions should be melting.
