Ingredients :
- 1 prime rib
- 1.5 oz/40 cl heavy cream
- 20 black peppercorns
- 0.35 oz/10 g butter
- 1 Tsp flour
- Salt
Preparation :
1/ Oil the grill of your barbecue and sear the meat 3 minutes on one side.
2/ Turn the meat 90° so that the grill forms pretty grid marks.
3/ Turn the meat to the other side.
4/ Program the application to the “Beef - Medium Rare” setting of 200°F/54°C and insert the meat°it probe into the thickest part of the meat.
5/ While it cooks, prepare the pepper sauce. Start by crushing the peppercorns with a pestle.
6/ Melt the butter in a pan and add the heavy cream.
7/ Add the crushed peppercorns and the flour and let the sauce thicken, while stirring it for about 10 minutes.
8/ When application sounds alert at the end of cooking time, remove the meat from the oven and program the application for 5 minutes standing time.
9/ Coat the meat with the pepper sauce and serve.
