Foie gras crème brûlée

Ingredients

100 g of foie gras
10 cl of liquid cream
Brown sugar
A little bit of 4 spices

Steps

Blend the foie gras until you have a smooth purée. Boil the cream, let it cool down a bit and then mix it with the foie gras until you get a cream without pieces.

Pour the cream into the ramekins and cook for 10 minutes at 110°C. Let them cool down and put them in the fridge. Sprinkle with a mixture of brown sugar and 4 spices. Burn the surface with a blowtorch.
