Rib steak with Roquefort sauce
2 rib steaks of about 250g
150g of Roquefort cheese
20cl of heavy cream
Green salad or lamb's lettuce
10 small potatoes
A piece of garlic clove or garlic semolina
Herbs of Provence
To begin, prepare your Roquefort sauce. Mix the Roquefort and the cream in a bowl until you obtain a smooth sauce.
Insert the meat°it+ probe (which you will have connected to your smartphone) into the thickest part of your steak. If you have several pieces, you can use several meat°it+ and manage them from your app.
Sear them on a hot pan on high heat following the advice of your app: no need for fat or seasoning!
Once seared on both sides, remove your meat and put it to rest.
In the same pan, brown the Roquefort sauce over low heat for a few seconds, stirring to allow it to take on the taste of the meat's juices.
Serve your steak with a small ramekin of sauce to be poured at the last moment, some potatoes and salad with some tomatoes, seasoned with olive oil and balsamic vinegar (1 spoon of vinegar for 2 spoons of oil).
You can season your meat as you wish (pepper and salt), but be careful, the sauce is naturally salty!
For the accompaniment, we advise you to serve some baked potatoes. Preheat your oven to 180°C. In the meantime, cut the potatoes in half and place them on your baking sheet. Add the finely chopped garlic clove, or sprinkle with garlic semolina, then add the herbes de Provence, olive oil and salt. Stir and bake for at least 30 minutes.
