Cinnamon stars

Ingredients

260 g almond powder
250 g sugar
15 g cinnamon powder
2 egg whites
1 tablespoon of lemon juice

Steps

Beat the egg whites until stiff. When they begin to stiffen, add the sugar a little at a time while continuing to beat. Set aside 2 heaping tablespoons of the mixture. 

In a bowl, mix the powdered almonds with the cinnamon, then add the lemon juice. Add the sweetened egg whites and mix well with your hands. Form into a ball. 

Sprinkle a little sugar on the work surface and roll out the dough to a thickness of 1cm. Cut out stars with a cookie cutter, and cover them with the egg whites set aside at the beginning of the recipe using half a spatula. 

Place the stars on a baking sheet covered with a baking mat and let them dry in a dry place overnight. 

After 12 hours, preheat the oven to 220°C and put them in the oven for 3 to 5 minutes. Keep an eye on the cooking time, the top of the stars must remain white and not brown.
