Caribbean Veal Chops

Ingredients

- 4 veal chops

- 1 tbsp coarse salt

- 2 tbsp dry oregano

- 1/2 tsp garlic powder

- ½ tsp of onion powder

- 250 gr of mango jam

- 125 gr of Ketchup

- 50 gr of butter

- 3 chopped shallots

- 1 clove of garlic, crushed

- 1 tsp of Espelette pepper

Steps

 

1/ In a salad bowl, combine coarse salt, dry oregano, garlic and onion powder.

2/ Sprinkle the veal chops evenly with this mixture, massaging well.

3/ Put the mango jam, ketchup, butter, shallot and crushed garlic in a saucepan. Heat for about 10 minutes until the desired consistency is reached.

4/ Program the Meat°it + application on the "Veal" cooking mode and insert the probe in the thickest part of the veal ribs (without touching the bone).

5/ In an indirect heat barbecue or in an oven at 180°C, put the veal chops in the oven until they are about 54°C below the desired temperature.

6/ Coat the veal chops with half of the mango glaze for the last 10-15 minutes of cooking.

7/ Remove the meat from the oven when you receive the end of cooking notification.  Coat the ribs with the remaining mango glaze.

8/ Then let them rest for 15 minutes under aluminum foil before serving.
